What flavors do you think of when you think about beer? Do band-aids, horse blanket, or bacon come to mind? Amazingly enought, some brewers actually encourage the development of these flavors and more by adding a type of yeast that goes by the name of Brettanomyces to their beer. No, they're not crazy. Some extremely tasty beers can actally be crafted through the use of this wild little yeast.
